I really liked one of the sabers that Madcow made. So I wanted to push the design a little further but I don't know which one i like better. What do you guys think?

I would say #2 with a sink tube shroud...

The saber I just finished looks very similar to #2 in a lot of ways, it's a nice look. And my favorite of the 3 you've chosen. That being said I like the idea of a shroud, I've seen some with similar angles as the blade holder, but in the opposite direction, it looks very cool. Also have you considered some of the other extensions, I think these would look great too.
This one would be more subtle similar to your #1 but more interesting IMO.

Well if any of you guys have a shroud idea let me know. I wanted to keep the lines simple making an old republic area saber. Its neither a sith or jedi saber I am the kind of guy that cant be happy with one color. I am starting to lean more rough jedi or sith thought after reading the "Deceived" book.
