Has anyone made a saber with a separate switch just for the sound? so that I could have my saber silent if I needed to

I believe that there was one made that was shown on the FX fourms.
It would be very easy to implement, just a latching switch between the speaker and the soundboard.

i actually wired an econo hasbro board on a separate circuit. there's a little momentary button on the pommel that turns it on and off. the main latching switch kills power to both the LED and sound circuits and the LED output of the soundboard is hooked to the accent LED in the switch.

so i need to go ahead and purchase me a momentary switch is what you're saying
if you wire the sound seperate from the LED, you'll need a resistor or buckpuck for the LED instead of a transistor and both a momentary and a latching switch. the latching switch for main power to everything and the momentary to triger the soundboard on and off. doing it this way will save you a bit of power over just cutting the feed to your speaker and get rid of any blink on clash nonsense if you're using an econo board. ^_^
