You can get 12v in a NiMH setup. 1.2v x 10 cells = 12v. As for li-ion, you'll be getting 14.8v in a 4 cell setup, or 11.1v in a 3 cell setup (uncommon).
You might check one of the various RC car or other type hobby forums. They've got a better handle on the larger power sources than the 1 or 2 cell solutions we use in sabers.
