So where exactly are people finding these nameplates for their sabers? It seems like everyone has these custom name plates for their sabers and I'm out of the loop on this one. I wants me one! gimme! Is it a website that does them or are they included in certain types of sabers?

I believe they are custom made...

Yup. All custom.
Same goes for the stands.
You'll have to find/make your own stands
and nameplates i'm afraid.

Unless someone here is kind enough
to make one for you.

It's really not too hard.
Try looking around in the yellow pages of your phone book.
If you're lucky, you'll have a local plastics company that can sell you some sheet poly carbonate.
For the stand, just make a well thought out and smooth template, dremel cut the templates out, sand the edges well, and assemble.
For the name plate, cut out a shape large enough for your saber's name, print out your name using what font you want from any word processor, and carefully dremel it into your plate. Or, if you can find a machinist near you that has a CNC mini-mill, you can have it carved into your polycarbonate by computer.

A lot of trophy shops can do custom engraving / CNC plates (for a cost of course).
