It depends on how you wire them. That's why the lugs have NO and NC printed next to them. ;)

Yes; you can wire them either way. For our needs (mostly), we want our switches to be NO. So, wire the NO1 and the C1. They can go either way with the numbers. You could also wire NO2 and C2 if you wanted. ;)

Well I know that this can be done with the AV style long, but I'm thinking of using the AV short, and from the pictures, it looks like there's only two leads for the connection (along with the 2 for the LED).

You are correct, the short has only two leads. To answer your next question; Yes it is a ST, :p (single throw) I'm pretty sure it is NO as well.
